What is Aged Green Tea?
“Aging” in tea refers to the natural deepening of aroma and flavor over time — it is not fermentation.
Although the enzymes in the tea leaves are no longer active, when the leaves are carefully stored in an oxygen-free environment, they develop a rich, complex fragrance reminiscent of fermentation.
Tea that has matured in this way — without enzymatic action — is called aged tea.
Through aging, the characteristic sharpness and greenness of fresh green tea soften, giving way to a mellow, rounded flavor. Aged tea is known for its smooth, clean mouthfeel, where the umami and sweetness become more pronounced.
