Nestled in the mountains adjacent to Kyoto’s renowned tea capital, Uji, the Takayama region of Nara Prefecture is celebrated as the heart of Japan’s handcrafted chasen (tea whisks).

Surrounded by pristine bamboo groves ideal for chasen production, Takayama has long been the center of this esteemed craft. Today, nearly all of the finest handmade chasen are meticulously crafted here by a select few master artisans, preserving a tradition that has endured for generations.

It takes over three years from harvesting the bamboo to completing a single chasen, with the expertise of eight artisans.

Astonishingly, crafting a single chasen requires more than three years from the moment the bamboo is harvested. The intricate process is divided into eight distinct stages, each meticulously handled by a specialized artisan.

 

 

Each stage of the process demands exceptional craftsmanship, ensuring the preservation of a 500-year-old tradition by allowing artisans to focus exclusively on their specialized techniques.

As a result, only 20 pieces can be produced per month, making them available in limited quantities.

 

The Difference Between Mass-Produced Chasen from China and Korea

 

Unlike mass-produced chasen, which are made by cutting bamboo, treating it with bleach, and immediately processing it by machine, Phenimax's handcrafted Japanese chasen follows a meticulous, time-honored process.

The bamboo is harvested in October and left to sun-dry for two months in the cold mountain air before undergoing a three-year aging period. Only after this careful preparation does the bamboo proceed to the crafting stage.

 

 

During this period, any deformed or substandard bamboo is discarded, ensuring that only those meeting the strictest selection criteria are chosen.

In the end, only about 0.2% of the harvested bamboo qualifies for use, reflecting the uncompromising dedication to quality.

Aji-Kezuri

 

The most significant difference between machine-produced chasen and handcrafted ones lies in the "Aji-Kezuri" process.

Aji-Kezuri is a delicate technique in which the inner layer of the bamboo skin is gradually shaved from the base to the tip. Among the eight stages of chasen craftsmanship, this step requires the highest level of skill and precision from the artisan.

Notably, the processing of the tip—known as “aji-kezuri”—is the quintessence of true craftsmanship.

The delicately carved, slender tip is designed to extract the fullest flavor and aroma of matcha.

The delicate tip yields an exquisitely fine, silky froth.

It is said that Aji-Kezuri can significantly influence the taste of matcha, making it one of the most crucial steps in the process.

The finely shaved tips of a chasen crafted using this technique reach an astonishing thinness of approximately 0.03mm (1/100th of a millimeter).

Considering that the average thickness of a human hair is approximately 0.08mm, the finely shaved tips of the chasen are less than half that thickness, showcasing the extraordinary precision of this craftsmanship.

In contrast, machine-produced chasen have stiff bristles and generate less froth, preventing them from fully bringing out the rich umami of matcha.
